Hi,
I am a newbie and I am looking for a guide to help me configure the game for driving in north america. It seems the road signs remain "international" although I selected USA as country...

Create a new profile, and then select United States of America for your profile. It should give you American road signs and driving laws.

It would be great if USA mode had more stop signs than yields. There are certainly more stop signs in North America than Europe and there are many intersections in the beginner stages that would benefit from this. Is there any way to change some yields to stop signs in specific areas/worlds?

Agree in Canada stop signs are far more common the yield signs!
