I can select a car in the first section of career mode - but it doesn't let me select one under novice or professional etc. Am I missing something?

Hello. No, in the most of the career missions you cannot change a car.

If you really want, you might be able to change the vehicle in the files. I figured out how to do it once, but it only worked for a few missions and I don't know if the procedure for this game version is still the same.
