Well, I guess I’ll be going with the G27 for the time being and if I don’t like it try something else.

How do they attach to a desk, and can it sit on the floor when not in use?

You'll love the G27, I guarantee it :) . THere are 2 ways to attach it to a desk.
1. There are 2 "clips" (I don't know what it's called in English, but the English word for what we call it in my native language is clip) under the wheel which you could lower, place the desk surface in between the clips, and tighten them so the wheel stays on the desk.
Another way is to make holes in your desk and bolt your wheel to the desk.

If you're not using the wheel, you may remove it from your desk and put it somewhere else (Disconnect the shifter and pedal wires first before removing the steering wheel)

In other words, yes they can be unattached and reattached all the time, there's no need to use screws.
