Often in this game, when someone does something like pass on the wrong side of the road when they are impatient, I will purposely block them. This caused a crash, which would be the Skoda driver's fault for rear ending me. Minor road rage from him ensues, he honks at me out of rage and later attempts to block me, but it doesn't amount to anything more and we part ways shortly after.

Whether he made an illegal overtake or not, it is your responsibility to avoid an accident. You chose to block his overtake and caused the crash that was never going to happen.

If someone is coming head on in your lane in a real life situation, do you: A: Continue to drive straight as they are in the wrong. Or B: Avoid the collision for everyone's safety

You are not the police. You are not a morally superior driver. All you are is sutbborn in this context. Just because you don't like something doesn't justify nearly causing an accident. What does it matter to you if someone else drives dangerously?

Choice B, at least certainly in real life.

Often in TruckersMP if someone is coming head on at me, if possible, I will wait until the last second and slam the brakes, forcing the other driver to back up to get around me.

We have also not considered the following:
Although I did create a dangerous situation by blocking him, he likely had enough time to brake and not hit my truck. The video shows that he did not attempt to brake.

Additional note: at 0:27 in the video I was not brake checking him, but braked hard because I thought the truck in front had braked suddenly.

In multiplayer there is lag. So he is closer to you than you see in your mirror, and also you are pulling out later on his screen. Therefore the distance is reduced and makes braking impossible, and better off swerving.

You cannot be excused from cutting him off, just because he doesn't want to sit behind the traffic doesn't give you a right to cut him off.
